The ripest of which are then fermented 72 hours, deeply enhancing their natural flavors. They are then dried naturally in the sun with the fruit intact to preserve the coffee’s natural sweetness.

Description

The Farm is “La Aurora” where producer Rubiel Orrego has lived all his life. Located in the Municipality of Villa Maria, within Eje Cafetero, the coffee axis of Colombia Part of the farm’s success comes from transitioning to more Natural Process coffees, like this one. Only the ripest coffee cherries are picked for this process. These in particular are even sweeter due to the higher altitude in which they were grown. They go through an Anaerobic Fermentation for 72 hours to enhance their natural flavors before being dried naturally in the sun with the fruit intact to preserve the coffee’s natural sweetness.

I chose a lighter roast to showcase some of those more nuanced sweet and tropical fruit notes. I started the roast curve high, but lowered the heat throughout the roast to help develop and caramelize some of those sugars and preserve the beans natural sweetness.
